Bollinger's NV brut champagne, crisp and smooth with a gentle mouse. The champagne shows the hallmark toasty and vanilla flavours with the distinctive Bollinger robust structure from Pinot Noir grape dominance.
This is excellent champagne that is feted the World over and rightly so: all still wines are matured in oak barrels (Bollinger is the only champagne house to employ a full time Cooper) before blending and rebottling to undergo the second fermenation and magic arrival of the bubble while ageing "in bottle" in the cellars. Any still reserve wines stored for the non-vintage blend in future years are stored in magnum bottles by grape variety and by cru - superb attention to detail.
Only Krug ages its entire production in oak (but does not employ their own permanent Cooper) and by that measure alone this makes the entry level Bollinger Special Cuvee very good value!
