In the Champagne region of France, rose champagne can either be made by slow pressing the black grapes (pinot noir mainly) to allow the colour in the skin to taint the wine, or at the assemblage (blending) stage the red wine can be added to the blend. This producer, from the southern extension of the Champagne region (the Aube) where much pinot noir is grown, adds the still wine to his blend. Featuring a classic blend of 40% Chardonnay grape with Pinot Noir and Pinot Meunier, there is also three years bottle age before disgorgement (legal minimum for NV is 15 months) to enhance the overall finish of this champagne. An elegant, fresh and well balanced champagne with a fine, crisp mousse. On the palate, this pink champagne has fruity light berry flavours with subtle richer wafts of butter and biscuits.
